For those tougher cuts or just to take some gamey taste out.

Mix a pouch of dry onion soup mix with 2 tablespoons of brown sugar in a bowl with a can of beer and 1/4 cup of ketchup and a tablespoon of minced garlic.

Put in a marinating tray or freezer bag for … 4 to 24 hours.
Feel free to add some spices as desired. I add a little lemon juice, maybe some soy sauce or tarragon depending on the day.
