Sourdough Pancakes

So what do you do with your sourdough starter besides bread? How about sourdough pancakes or sourdough bagels? For pancake day – try some sourdough pancakes.

Every time you feed your starter, it requires you to discard some of the starter, what a waste. Instead, use it to make sourdough pancakes. The following recipe is one I have been using in the mornings to make 10-12 pancakes in the morning. I don’t necessarily eat them right away as they freeze quite nicely and a pop into the toaster to thaw/warm them up makes for a great, fast and simple breakfast.
1 cup of your sourdough starter as you discard during a feeding
2 cups flour All-purpose or mix with whole wheat
4 tsp baking powder
1 tsp baking soda
1 tsp corn starch
2 tbsp sugar
1 tsp salt
1 1/2 cups milk
1 egg
2 tbsp vegetable oil
Mix all the ingredients in a large bowl and stir it all together. The cornstarch will thicken it up nicely. If you may want them, runnier add a bit more milk.
Cook on a hot griddle/pan until bubbles appear on edges, flip and cook another minute or two. Flip them again until cooked through.
Add strawberries, blueberries to the batter for added flavour.
